BBQ Chicken Sandwich

Sorry for taking so long to post a new recipe.  I've been occupied with job searching, running errands, Halloween, etc.  Over the weekend, I attended a few Halloween parties and had fun dancing and hanging with some friends.  My phone interview on Monday was pretty nerve wracking.  I really don't know how I did but my interviewer said she would give me a call in 1-2 weeks if she wants an in-person interview.  I will continue to apply to other jobs because I never know what will happen.

Over the weekend, I decided to make BBQ Chicken Sandwiches.  I use chicken a lot in my recipes because I prefer chicken over any other meat.  I try to stay away from red meat especially because its unhealthy to eat too much.  Here's an article about a research done on how consumption of red meat increases cardiovascular disease and cancer: http://articles.cnn.com/2009-03-23/health/healthmag.red.meat.lifespan_1_red-meat-white-meat-mortality-risk?_s=PM:HEALTH.

This sandwich did not taste as expected because I put too much vegetables and not enough BBQ chicken.  So I advise that you put more chicken than is seen in the picture above.  This sandwich tasted pretty good overall, however.  To make this sandwich, follow the recipe below:

Serving size: 1 burger
Burger bun
4-8 oz of cooked, shredded chicken
1-2 Tbsp of BBQ sauce
Lettuce/Spinach (as much as you like)
Sliced tomatoes (as much as you like)
Guacamole - to spread on the bun
Mayonnaise - optional

First, toast the buns in a toaster oven if you like your buns toasted instead of soft. Put the cooked, shredded chicken in a bowl, pour BBQ sauce and mix thoroughly.  Spread guacamole on the bun, place BBQ chicken on, followed by tomatoes, and lettuce/spinach.  Put mayonnaise on the other side of the bun if you like.  Enjoy!
